How to simply and deliciously pickle pickled cucumbers at home
We all love to surprise our loved ones and pamper them with delicious, homemade food. Old recipes are always popular. This is understandable, because they are time-tested. Well, what if you give preference to new, modern methods of canning? Discover another way to prepare salty, crispy cucumbers for the winter. Which you will surely like and will be able to take root in your family for many years.
We will need:
- Cucumbers – 1.5 kg.
- 3 tbsp. spoons with a heap of salt
- horseradish leaf
- 2 dill umbrellas
- 2 currant leaves
- 2 cherry leaves
- sprig of tarragon
- hot pepper to taste
- 5 cloves garlic
Preparation:
1. Wash fruits suitable for pickling, remove the stem and soak for several hours in cold water. Then drain the liquid and rinse again under running water.
2. The selected spices should also be washed and dried. From horseradish leaves we only need petioles, which need to be cut into plates of about 10 centimeters each. It will be better to chop the hot pepper in the form of rings. For each jar, 3 pieces are enough.
3. Now place vegetables, herbs and seasonings one by one at the bottom of clean jars. Freely, without much effort, fill the container to the very top. Then fill the food only halfway with clean, not boiled, cold water. Next, add a glass of saline solution to the liquid. This is the very innovation that, it seems to me, is very convenient to use in the cooking process. We prepare it according to the following calculation: for every 3-liter jar, three tablespoons of salt diluted in a glass of boiling water. Then fill it again with plain water, but this time up to the very neck.
4. Place the blanks on plates and leave them at room temperature for three days. During this time, the cucumbers should sour. Foam will appear on the surface, and the existing liquid will acquire a cloudy base.
5. Pour the resulting solution into a saucepan and set on fire. Next, pour the boiling brine back into the jars. It should fill the vessel to the very neck. If this does not happen, then simply add boiling water and close tightly with a nylon lid.
Ready pickles should be stored in a cool place. In just a couple of weeks, the crunchy, salty snack will be ready.
These cucumbers, prepared with love, are in no way inferior to the classic barrel versions. Try pickling vegetables according to this recipe this year and very soon everyone who has tried it will be asking you for this recipe. Moderately spicy, hard, sour fruits are perfect not only as an independent snack for a feast, but will also go well with other dishes and salads.

Pickled cucumbers for the winter as if from a barrel
Not every house, much less an apartment, has a cellar or basement for storing our favorite preparations. Therefore, we often turn to the search for those options that would completely suit us in preparation and are well preserved until deep winter. This is exactly what my next recipe for preserving pickles is. Jars of pickles can be left on the kitchen counter or even in the cupboard.
We will need:
- Fresh cucumbers – 4 kg.
- Horseradish leaves (roots)
- Cherry and currant leaves
- Dill umbrellas
- Garlic
- Hot peppers
- Bay leaf
- Peppercorns
For the marinade:
- 1 liter of water
- 50 grams of salt
Let's start cooking:
1. Before you start putting ingredients into jars, be sure to thoroughly rinse the cucumbers, all herbs and garlic. And also do not forget about the jars, which do not need to be sterilized according to this recipe. Therefore, it is worth washing them very well.
2. Now lay out all the prepared herb as desired on the bottom of a clean container. It is better to cut the hot pepper into rings, but without removing the seeds. Garlic can be added as is, cloves. And of course, don’t forget about peppercorns, without which the taste will be completely different.
3. The base is prepared and now we lay the fruits tightly together to fit as many as possible. Fill the remaining voids on top with horseradish and currant leaves.
4. Meanwhile, prepare the brine. His recipe is very simple: per liter of cold water - 50 grams of salt. Mix everything well until completely dissolved. Then fill the jars with raw liquid about 1 centimeter to the top. Cover them with a lid, but do not screw them in.
5. In this form, we leave the preparations in the kitchen or simply at room temperature for 2-3 days for fermentation. If the room is warm, then within a couple of days your vegetables will acquire the salty taste and aroma of prepared cucumbers. By the way, be sure to place a plate under the jars, because during infusion the brine will rise and flow out.
6. During the soaking time, foam will appear on the surface of the pickles, and the liquid itself will become cloudy. The lids covering the jars should be thoroughly washed and boiled.
7. In turn, pour the brine into a saucepan and bring to a boil. Keep it on the fire for about 2-3 minutes. Then pour it hot into the same containers with cucumbers. Immediately close with boiled lids and seal hermetically.
8. Turn the pieces upside down and leave until completely cool. There is no need to wrap them up.
This preservation will allow you to preserve cucumbers at any temperature for 2 years. Well, if you can’t wait, then after two months you can use them. An easy way to cook green vegetables without vinegar and sterilization is available to every novice housewife. It definitely won’t disappoint you and you will definitely get the desired result of strong, moderately salted, pickled cucumbers for the holiday table.
