Tomato sauce - a simple recipe from tomatoes with vinegar

The recipe is very simple and with a minimum of ingredients. Vinegar is used as a preservative. This sauce will keep longer, even in the refrigerator or cool pantry.

For 10 kg of tomatoes you will need:

  • 5 tbsp. l. salt,
  • 10 tbsp. l. granulated sugar
  • 20 tbsp. l. 9% table vinegar,
  • Spices (1 tsp cinnamon, 20 cloves, 20 allspice peas and 30 regular peppercorns).

The amount of ingredients can be proportionally reduced if desired.

How to cook

The tomatoes are washed, the stalk is cut out and passed through a meat grinder.

In small batches, the juice along with the pulp is poured onto a sieve and rubbed to remove seeds and peels.

The resulting purified juice is poured into a basin, the heat is turned on and, stirring occasionally, the mass is boiled to half the volume, that is, the tomato mass will slowly boil, the water will evaporate, and the sauce will slowly thicken.

When the sauce has reduced by half, add salt and sugar and stir. Add cinnamon and spices, and cook for another 10 minutes.

Add vinegar and let the sauce boil. The hot mass is poured into sterilized jars and immediately screwed on (tightly sealed) with boiled lids.

When preparing sauce for future use, it is more convenient to use jars with a capacity of no more than 0.5 liters.

The jars are turned over and wrapped in something warm, and left until the jars have cooled completely.

Plum and tomato ketchup for the winter

This homemade sauce will forever discourage you from buying ketchup in the store.

You will need:

  • plum - 1 kg;
  • tomatoes - 2 kg;
  • onions - 3 pcs.;
  • garlic - 7 cloves;
  • salt - 20 g;
  • sugar - 200 g;
  • vinegar - 40 ml;
  • seasoning mixtures - to taste.

How to cook:

  1. Cut the tomatoes, pour boiling water over them and remove the skin. Grind in a blender.
  2. Also puree the plums (after removing the pits) and onions.
  3. Combine both purees and bring to a boil. Cook on low heat for an hour.
  4. During this time, the ketchup will decrease in volume and thicken a little.
  5. Add finely chopped garlic to the puree. Salt and add other seasonings.
  6. Keep the mixture on the stove until it thickens (about an hour). Stir all the time.
  7. Add vinegar and simmer for another 15 minutes.
  8. Prepare sterilized containers and pour ketchup. Close the lids tightly. Cool by turning the jars upside down.

Store the preparations in the refrigerator or cool place.

Recipe for making tomato sauce without vinegar

There is nothing superfluous in the proposed recipe, except natural ingredients, including vinegar. The tomatoes themselves add sourness.

For 4 kg of tomatoes you need to take

  • Apples – 1 kg,
  • Onion – 0.5 kg,
  • Salt – 3 tbsp. l.,
  • Sugar – 3 tbsp. l.,
  • Spices - 20 peas of allspice or black pepper,
  • 8 bay leaves,
  • 5 cloves,
  • 1 tsp. ground paprika,
  • 0.5 tsp. ground cinnamon.

Preparation

  • Wash and peel tomatoes, apples, and onions. Pass them through a meat grinder. Pour the apple-tomato mixture into a large saucepan, stir, and put on fire. The mixture should simmer over medium heat for 1 hour. Stir the sauce from time to time.

  • After an hour of cooking, add salt and sugar to the mixture and stir. Add the spices after the salt, mix again and leave to simmer for another 3 hours.

The amount of sugar and salt is individual. Taste, as tomatoes themselves can be sweeter or sour, just like apples. If you want a sweeter sauce, add sweet and sour apples.

  • While the sauce is cooking, prepare the jars and lids. We sterilize the jars in a way convenient for you, and boil the lids.
  • The finished sauce contains large fractions (seeds, remnants of the peel), if you don’t like them, then rub the mixture through a sieve.
  • The finished sauce is poured hot into jars, immediately sealed, and turned over. After the jars have cooled, store it in a cool place.

Specifics of preparing tomato dressing for the winter

No matter what you do with tomatoes, they will not lose their beneficial properties - these vegetables are equally resistant to heat treatment and freezing. That is, after preparing supplies of such homemade tomato paste, you can defrost it and still get a healthy product.

This, however, is very easy - even an inexperienced housewife can cope, who, having once compared the sauce on homemade pasta and the same on purchased pasta, will forever make a choice towards the first option.

Product requirements

Obviously, the tomatoes must be fresh. You should not believe the stories that for paste you can use tomatoes that are discounted due to bruising, small areas of rot and spoilage. Even if you remove these spoiled places, the vegetable itself is no longer fresh, does not have the proper elasticity, and its taste is spoiled.

You should not take unripe tomatoes either - they will cook slowly, give less juice, and will not peel well. The signs are: white core, green or yellow spots (not to be confused with the Black Prince variety - dark green spots are normal for it).

  • 2.5 kg of tomatoes,
  • 750 g sweet pepper,
  • 1 pod hot pepper,

  • A large bunch of parsley

  • Clean jars and lids.

How to cook

Tomatoes need to be peeled and grinded through a meat grinder. Separately, grind the bell pepper through a meat grinder, having previously cleared it of seeds. Twist the hot peppers separately and finely chop the parsley.

Pour only the tomatoes into a thick-bottomed pan for now. Boil for 30 minutes.

Now add pepper (sweet and bitter), let it boil and cook for another 30 minutes.

When there are 2-3 minutes left until the end of cooking, add oil, garlic, herbs and boil for another 2 minutes.

To make the sauce thick, it must be boiled down to 1/3 of its original volume.

Immediately pour the hot sauce into clean, dry jars and seal. From the proposed set of products, five half-liter jars are obtained.


Ketchup with apples and tomatoes for the winter

A universal sauce with sourness.

Required:

  • tomatoes - 5 kg;
  • onions - 1 kg;
  • sour apples - 1 kg;
  • garlic - 1 head;
  • salt - 80 g;
  • sugar - 250 g;
  • vinegar (6%) - 5 tbsp. l.;
  • black pepper - to taste.

Cooking process:

  1. Remove the seeds from the apples. Cut into cubes along with the tomatoes. Grind garlic and onion.
  2. Place all ingredients in a saucepan and boil. Open the lid and reduce the temperature. Simmer on the stove for 60 minutes.
  3. Cool the mixture and pass through a sieve.
  4. Season with salt, pepper and sugar. Finally add vinegar. Let it boil again and pour into sterilized jars.

Store the workpiece in a cool room at a temperature not exceeding + 10 °C.

Winter soup dressing made from tomatoes, onions and carrots

This variety will require slightly different ingredients than the classic soup dressing. Recipe Ingredients:

  • half a kilo of onions;
  • the same amount of carrots;
  • 300 g bell pepper;
  • 250 g tomatoes;
  • 200 ml vegetable oil;
  • teaspoon rock salt.

After preparing all the ingredients, the cooking process follows:

  1. Chop the onion and fry in half the amount of oil.
  2. Grate the carrots on a coarse grater.
  3. Transfer the fried onions to a cauldron for stewing.
  4. Add 50 ml of oil and add fried carrots.
  5. Cut the pepper into small cubes.
  6. Pour the remaining oil into the pan and then add the pepper.
  7. Cut the tomatoes into cubes.
  8. Add roasted peppers and tomatoes to carrots and onions.
  9. Add salt.
  10. Stir and immediately pour into hot jars.

The jars must be turned over and wrapped in a warm blanket.
