Selection and preparation of vegetables
Before cooking, the cook must select and prepare vegetables for the canning process. Medium or small varieties of non-salad tomatoes are used as pickled tomatoes.

Cooking instructions
- Let's prepare sterilized liter jars and lids.
- Select dense tomatoes and rinse them thoroughly with clean water. Dry and cut off the stem. We divide each tomato into two halves. Cut large tomatoes into 4 parts. It is desirable that the slices are the same size.
- Remove the skins from the onion and chop it into thin rings.
- In a clean liter jar we put at the bottom: a sprig of parsley, an umbrella of dill, a clove of garlic, a few onion rings. Pour in 50 grams of vegetable oil. Then we lay the tomatoes tightly in layers and add a few more onion rings.
- Prepare the marinade. Pour one and a half liters of water into the container. It is enough for 4 liter jars. If you end up with 8 cans of tomatoes, then take three liters of water and accordingly double the ingredients for the marinade. After the water boils, add bay leaves, salt, sweet peas, sugar and black peppercorns.
- Boil for 3 minutes and add vinegar. Pour the hot filling into jars and cover with iron lids.
- Place a towel or napkin at the bottom of a suitable container and place the jars filled with tomatoes. Pour warm water just below the hangers of the jars. At a gentle boil, sterilize for 10 minutes.
- We take the jars out of the pan and roll up the lids. Turn them over with their lids down. Cover the jars with a blanket until they cool.

Preparation:

Tomato recipe without sterilization

Ingredients:
- tomatoes - 1000 g;
- onion - ½ part of the head;
- vinegar 9% - 30 g;
- granulated sugar - 60 g;
- sweet pepper - 20 g;
- salt - 25 g;
- garlic - 1 clove;
- parsley, pepper, bay leaf - to taste.
Step-by-step preparation:
- Wash the jars in boiling water.
- Peel the onion by chopping it.
- We peel the garlic and pass it through a press.
- Chop the parsley.
- Slice the sweet peppers.
- Place chopped onion, garlic, sweet pepper and parsley at the bottom of the jar.
- Wash the tomatoes well. Using a sharp knife, cut the fruit into two equal parts. They must not lose sight. We put the slices in jars; they should fill it to the top.
- Pour boiling water over the fruits and cover with a lid. Let it brew for 15 minutes, after which we pour the water into the pan.
- Add granulated sugar, salt and vinegar to the water. Let it simmer for a couple of minutes.

- tomatoes - 2 kg;

- peppercorns - 8 pcs.;
- dill - 2 umbrellas;
- granulated sugar - 110 g;
- salt - 2 tbsp;
- hot pepper - 3 g.
Cooking steps:
- Cut the green tomatoes into two parts.

- Place dill, prepared hot pepper, bay leaf, horseradish leaf and peppercorns at the bottom of the glass container.

The cucumbers remain quite crisp, as do the peppers, and the tomatoes are firm and juicy. The main thing is to choose fruits that are not overripe. If you want a brighter taste, you can add black or allspice, bay leaf. The amount indicated in the ingredients is enough to make 5 liters of snacks.
You will need:
- tomatoes – 5 kg;
- cucumbers – 1.5 kg;
- bell pepper – 1 kg;
- salt to taste.

Wash and dry the vegetables.
Cut the bell pepper in half, remove the seeds, remove the stem and cut into strips.
