Here is a recipe that has become a classic, because the perfectly selected proportions of spices in the marinade made the cucumbers incredibly tasty.
Take for a liter jar:
- Cucumbers, gherkins.
- Garlic – 2 cloves.
- Honey - a big spoon.
- Allspice – 5 peas.
- White mustard - ½ small spoon.
- Coriander - the same amount.
- Cloves – ½ small spoon.
- Dill, horseradish, cherry, currant or grape leaves (optional).
For the marinade:
- Water – 550 ml.
- Granulated sugar – 100 gr.
- Tar is a big spoon.
- Vinegar 9% - 100 ml.
Step by step recipe:
Soak the cucumbers for an hour or two, cut off the ends.
Coarsely chop the garlic cloves.
Place all the greens you decide to use, garlic, and peppercorns on the bottom of glass containers.
Add cloves, coriander, mustard seeds.
Fill the jar with cucumbers. First, install a row while standing, this will allow much more cucumbers to fit in. Take greens of the same length. Place small specimens on top.
Pour the required amount of water into a separate bowl, add salt and add sugar. Add honey. Whisk the contents thoroughly so that the honey and spice crystals are thoroughly dissolved. Place on the stove. As soon as the marinade begins to boil, pour in the vinegar. After a minute, turn off the stove.
Pour the marinade into jars. Cover with lids. Leave for 15-20 minutes so that the cucumbers warm up thoroughly.
The workpiece is subject to sterilization. To do this, place any fabric on the bottom of a wide pan, pour hot water, and place the jar. Covered with a lid. The water in the pan should come up to the hangers. When the liquid in the pan boils, set the timer for 10 minutes - the heat treatment time for liter jars.
Screw on the preservation with a screw cap. If you use iron ones, roll them turnkey.
Turn the workpiece upside down and wrap it warmly. Leave for a day so that the seaming slowly cools. The next day, be sure to check if the marinade is leaking and adjust if necessary. Move to a cool room for winter storage.
Crispy cucumbers marinated with honey without sterilization
The simplest option for winter preparation without sterilization. Calculation of components is given for a 3 liter jar.
We take:
- Cucumbers – 2 kg.
- Cherry leaves – 5-6 pcs.
- Horseradish root - a piece.
- Hot pepper – ½ pod.
- Honey – 50 gr.
- Garlic – 5 cloves.
- Salt – 50 gr.
- Vinegar – 100 ml.
- Dill - umbrella.
Blank:
- Soak the gherkins for an hour, then cut off the ends.
- Place cherry leaves, a small piece of horseradish, a few rings of a spicy pod, and an umbrella of dill into the jars.
- Fill the container with cucumbers, interspersed with garlic cloves. Fill to the top with boiling water.
- Let sit for 10 minutes, then pour the infusion into a saucepan.
- Add salt and honey to the infusion, let it boil, pour in vinegar.
- Immediately pour into the jar and seal using any available method. Cool under a warm shelter, then take it into the cold.
Choosing the right honey
High-quality honey can be different: light and dark, liquid and hardened. But you can still determine its quality. If you choose a liquid bee product, then when scooping it with a spoon, the stream should be continuous. When it connects with the surface of the total mass of honey in the jar, its folds lie next to each other, preserving the pattern for some time.
A visual inspection of the product in the container should also give results. If there is foam on the surface of the honey at the edges, this indicates the beginning of the fermentation process.
With a light and young beekeeping product, the taste of preservation will be more delicate than with a dark one.
But if you want to add spices to the dish, then buckwheat honey is ideal.
The most delicious lightly salted cucumbers in a bag - a quick recipe
A very popular instant recipe. After a day, you will get real pleasure if you are not lazy and do at least a little.
Required:
- Cucumbers – 1 kg.
- Salt – 2 tablespoons.
- Honey - the same amount.
- Garlic – 5 cloves.
- Dill, allspice peas.
How to do:
- Cut large cucumbers into thick rings, or cut lengthwise into quarters. Leave the small ones whole.
- Mix honey, crushed dill, garlic cloves, and salt in a water bowl. Mash the mixture well.
- Place the vegetables in a bag and pour the marinade over them. Shake the bag thoroughly so that the marinade spreads throughout all the cucumbers.
- Tie tightly and place in the refrigerator. After 4-5 hours, the snack can be placed on the table, but it is better to leave it for a day.

Required:
- Cranberries – 200 gr.
- Cucumbers – 1.5 kg.
- Honey – 40 gr.
- Wine vinegar – 50 ml.
- Water - liter.
- Sugar – 60 gr.
- Salt – 50 gr.
Cooking method:
- Cut the cucumbers into large pieces. Sort the cranberries and wash them.
- Fill the jar with cucumbers, sprinkling with berries.
- Boil water, add honey and spices. When the grains of granulated sugar are completely dissolved, season the marinade with vinegar.
- Pour the marinade into a jar and immediately screw the lid on.
- Cool by turning it upside down and wrapping it warmly.
How to preserve correctly?
Preparing cucumbers with honey is not much different from the process of traditional canning for the winter. If you follow the recipe, preparation and storage rules, cucumbers in honey filling will retain their freshness for a long time, until a new harvest appears.
The basic rules are:
- All jars must be thoroughly washed and sterilized. It is better to place cucumbers in a vertical position - this way you will be able to place more fruits in the container.
- Smaller fruits are preserved in 1-1.5 liter jars. The 3-liter ones are large.
- If foam forms during the preparation of the marinade, it must be skimmed off.
- The honey used for the marinade must be of good quality.
- To add a spicy taste, you can add a piece of chili pepper, even if it is not in the list of ingredients.
- If the recipe states that the jars must be kept warm for a day, do not neglect this advice. Sometimes vegetables need to cool slowly to get crispy results.
The workpieces should be stored in a cool, dark place at a temperature of +15 °C. Vegetables are considered suitable for consumption throughout the year. But if after this time the brine has not become cloudy, this means that the product still retains its quality characteristics.
Spicy cucumbers with honey, carrots and pepper
Another salad option. The recipe is considered ancient, this is how our grandmothers delighted their households.
Necessary:
- Cucumbers – 3.5 kg.
- Carrots – 1.2 kg.
- Honey – 80 ml.
- Garlic – 25 cloves.
- Red hot chili – 3 pods.
- Sunflower oil – 250 ml.
- Granulated sugar – 160 gr.
- Table vinegar – 240 ml.
- Salt – 120 gr.
- Red pepper, ground – 20 gr.
How to marinate:
- Soak the cucumbers in cold water for a couple of hours, then rinse and cut into 4 pieces.
- Grate the carrots using a large mesh grater. Chop the sharp pods into rings.
- Combine all prepared ingredients in a common bowl.
- Season with oil and honey. Season with ground pepper, salt, vinegar, sugar. Stir thoroughly.
- Cover with a towel and leave to steep for 4 hours. Then distribute the salad into jars and fill with the remaining marinade.
- Sterilize for 20 minutes, then seal and cool.

Ingredients for a liter container:
- Cherry tomatoes.
- Gherkins.
- Honey – 10 gr.
- Garlic – 3 cloves.
- Vinegar – 10 ml.
- Dill – 2-3 umbrellas.
- Black pepper – 5 pcs.
- Sugar – 15 gr.
- Salt – 10 gr. (1/2 tablespoon).
Preparation:
- Place garlic, dill (leave one for the top), and peppercorns into glass containers.
- Fill with vegetables in any order. For tomatoes, I advise you to puncture the stem with a toothpick, then they are guaranteed not to burst during hot processing.
- Make the first pour for a quarter of an hour. Then drain the infusion and cook a marinade from it, adding all the spices listed in the recipe. Add vinegar at the very end.
- Return to jars and seal immediately. The shelf life of the product in a cool room is 1 year.
