How to properly harvest and preserve it?

Before storing cabbage for long-term storage, the crop must be properly harvested. Each variety has its own specific period, which is individual. For example, mid-late varieties are harvested from the garden in early or mid-October, and late varieties are harvested as soon as frosts start outside, it all depends on weather conditions. Sometimes this may not happen until November.


If you plan to ferment or pickle, then you need to harvest in October. It is worth understanding that if cabbage intended for long-term storage is collected before it is fully ripe, the heads of cabbage will quickly wither, and if they are exposed to frost, they will become soft, burst and quickly deteriorate.

How to harvest for storage:

  1. Cabbage is cut in dry, sunny weather with a sharp knife, leaving 2 cm stalks. Crops harvested in the rain must dry out before they are stored.
  2. If long-term storage is expected, then the heads of cabbage should be torn well, choosing only whole ones without damaging the head, on which the 3 outer leaves are left.

For storage, choose a cellar, basement or cold storage room. But to preserve the harvest, the following conditions must be observed:

  • The room temperature should be -1-+1 degrees, with a humidity of 90-98%. If the temperature is higher, the cabbage will germinate; if the temperature is lower, it will freeze.
  • Cabbage is very juicy, and therefore the humidity in the room must be observed very strictly. If there is not enough humidity, the crop will dry out quickly, and with higher humidity it will begin to rot. If the humidity is optimal, the top leaves will dry out a little and lie tightly to the head of cabbage.
  • It is worth placing the cabbage so that it does not touch each other, and the stalks should be directed upward.

The storage area should be prepared in advance. The room should not only be cleaned, but also disinfected, dried and ventilated. Disinfection is carried out as follows:

  1. whitewash the walls with lime;
  2. fumigate it with sulfur;
  3. prepare special pallets.

Cabbage should be placed in special boxes with slots that are placed on pallets.

There are several ways to store heads of cabbage, which are worth describing so that you can choose the best one for yourself:

  • A special tray with holes for ventilation is knocked together on the floor of the room. Heads of cabbage are stacked on it in a pyramid in a checkerboard pattern, with large heads of cabbage on the bottom and small ones on top.
  • Wrap each head of cabbage paper in several layers. You can use newspaper, but not as the first layer. Then put it in bags.
  • Sand is often used for storage, and the floor of the room is covered with a thick layer. The cabbage is placed on it with the stalks up and covered with a second layer.

In addition to the above time-tested methods, some gardeners now use other methods. Methods for storing cabbage:

  • Wrap each head of cabbage in cling film in three rows and place it in boxes or coolers.
  • They use thick plastic bags, in which they place one head at a time and tie it. In this state, cabbage will be stored for as long as possible.
  • Some vegetable growers sprinkle the heads of cabbage with chalk.

No matter how cabbage is stored, it must be periodically reviewed and sorted, removing damaged specimens.
