    The jar for the preparation must be sterilized in any way. Either hold it over steam or pour boiling water over it. Place washed, halved tomatoes into a clean jar.

    Wash the greens well, chop and place in a jar on top of the tomatoes.

    Add dry herbs or any other spices you like.

    Be sure to add the pepper mixture.

    Wash the apple, cut into slices and place on top of the jar.

    Pour boiling water into the jar.

    Tomato adjika is always prepared according to the same principle - vegetables are pureed, boiled, spices, oil and vinegar are added as a preservative. You can safely change the amount of hot pepper and onion depending on your taste preferences. The same goes for salt.

    Products you will need:

    • 5 kg of tomatoes;
    • 1 kg pepper;
    • 1 kg apples;
    • 1 kg of onion;
    • 1 kg carrots;
    • 4 pods of hot pepper;
    • 400 g garlic;
    • 1 tbsp. (250 ml) vinegar;
    • 1 tbsp. Sahara;
    • 1 tbsp. vegetable oil;
    • 4 tbsp. l. salt;
    • A bunch of parsley and dill.

    Recipe with photo:

    1. Wash all the vegetables, peel and cut into small pieces. Their shape does not matter, since we will still put them through a meat grinder. First, grind the tomatoes into puree and put on fire. Meanwhile, chop apples, sweet peppers, hot peppers, carrots.

    2. Add the vegetable mass to the boiled tomato puree and stir. Cook over low heat for 1.5 hours. During this time, constantly stir the mixture with a spatula.

    3. We peel the garlic and also grind it in a meat grinder or pass it through a press. Finely chop the greens with a knife. Place in a saucepan with adjika. Measure out the required amount of spices, vinegar and oil. Stir and let simmer for another half hour.

    4. Turn off the heat and pour adjika into sterilized jars. Cover tightly, cool and place in a cool, dark place for storage.

    Cooking with mustard

    Pickled Antonovka turns out incredibly tasty if you add a little mustard to it. Such apples acquire a tart and spicy taste that will delight men.

    For an 8 liter bucket you need to prepare:

    • apples - 1 bucket;
    • sugar – 1 glass;
    • salt – ½ cup;
    • mustard – 3 tbsp. spoons;
    • natural honey – 2 tbsp. spoons.

    The manufacturing process is carried out according to the following scheme:

    1. The bottom of the bucket is covered with currant leaves.
    2. Lay out a layer of fruit, again place currant leaves on them, thus filling the entire container.
    3. At the next stage, the brine is prepared by pouring water into a large saucepan, adding sugar, honey, mustard and table salt.
    4. Place the pan on the stove and let the marinade boil.
    5. Pour the cooled brine over the apples.
    6. The last layer of leaves is placed on the fruits with the marinade, oppression is installed, and the bucket is covered with gauze on top.

    Smooth, spicy homemade ketchup made from fresh vegetables will perfectly decorate the winter menu. Of course, you can buy ketchup in the store, but homemade ketchup not only contains no preservatives, dyes or flavors, but is also much tastier.

    For this recipe, not only do you not need to mince the vegetables, but you don’t even have to chop them finely.

    Required Products:

    • 3.5 kg of tomatoes;
    • 600 g apples;
    • 500 g onions;
    • 4 bell peppers;
    • 2 hot peppers;
    • 1 head of garlic;
    • 2–3 bay leaves;
    • 1.5 tbsp. l. salt;
    • 4 tbsp. l. Sahara;
    • ½ tsp. cinnamon;
    • 1 tsp. ground black pepper;
    • 40 ml table vinegar.

    Preparation:

    1. Wash the tomatoes and cut each one in half, removing the stem. We put it in a cauldron and put it on the stove. When the tomatoes begin to boil, a lot of juice will form. We drain about half a liter, and then look at the density. If necessary, you can add a little back.

    2. Add onions and apples, cut into large pieces, to the boiling tomato mass. Simmer everything over medium heat for 20 minutes. Then add whole garlic, hot pepper, and bay leaf. Simmer for another 20 minutes.

    3. We take out the bay leaf and throw it away. Grind the mixture into a homogeneous puree using an immersion blender. Add spices and vinegar.

    4. Cook over low heat, stirring continuously, for another 15 minutes. If desired, ketchup can be rubbed through a sieve to remove tomato seeds, but this is not at all necessary. Pour into glass jars and seal.

    5. No need to turn over, just cover until completely cooled. In winter, open and serve with any meat dish or side dish.

    In cookbooks and on Internet sites you can find many recipes that use both fruits from the garden and tomatoes.     Fruits are placed in slices at the bottom of sterile, dried jars, tomatoes are placed on top, alternating them with apples, after which the container is filled with boiling water. When the liquid has cooled, it is sent to a saucepan, spices and pepper are poured into it and boiled a little. Vinegar is added to the jar with the contents, and the prepared marinade is poured. After sealing with tin lids, the salting is wrapped in a warm blanket.

    For a 3-liter jar, in addition to tomatoes, you need to take:

    • dill;
    • pepper - half a pod;
    • sugar - 60 g;
    • salt - 3 tablespoons.

    The remaining ingredients are taken in the following quantities:

    • Antonovka apples - 2 pcs.;
    • garlic - 3 cloves;

    • vinegar (9%) - tsp;
    • sugar - 2 tbsp. l.;
    • salt - 60 g.

    Small tomatoes with thick skin are selected for snacks. Vegetables are washed under the tap. The cooking process consists of several stages:

    1. The core of sweet and sour apples is removed and the fruits are cut into slices.
    2. Spices and herbs, fruit slices and garlic, tomatoes and again apples are placed in sterile jars.
    3. The container with its contents is filled to the very top with boiling water.
    4. After 10 minutes, water is poured into a saucepan, salt and sugar are added and boiled.
    5. The resulting marinade is sent to jars with tomatoes, mustard and vinegar are added.

    Neither vegetables nor fruits change color after preservation. The apples remain green and the tomatoes take on an even brighter hue.

    Garlic, whole apples and tomatoes are placed in jars and filled with boiling water. The liquid is poured into a saucepan, sugar and salt are added, and boiled for a couple of minutes.     Winter preparation of tomatoes, peppers, apples with carrots and/or onions, garlic

    We offer a universal option for preparing vegetables for the winter. In addition to tomatoes, peppers and apples, it also contains carrots and garlic, as well as hot chili peppers. The sauce turns out to be a beautiful orange color, with a pungent taste and spicy aroma.

    If desired, you can add 1-2 large onions for piquancy, while reducing the amount of carrots and bell peppers by exactly the same gram as the onion weighs.

    Required Products:

    • 1.5 kg of ripe tomatoes;
    • 1 kg bell pepper;
    • ½ kg sour apples;
    • ½ kg carrots;
    • 250 g garlic;
    • 150 g fresh chili pepper;
    • 150 ml sunflower oil;
    • 1 tbsp. l. salt.

    Step by step recipe:

    1. Peel the carrots and cut them lengthwise into slices that will be convenient to chop in a meat grinder. Peel the apples, cut them into four parts, and remove the seeds.

    2. Remove the core of bell and hot peppers along with the seeds. Cut into arbitrary pieces.

    3. Peel the garlic. We pass all components through a meat grinder. You can use both mechanical and electrical.

    4. We cut the tomatoes into slices and also grind them into puree.

    5. Place the first vegetable mixture into the pan, bring to a boil, cover with a lid and cook over low heat for 30 minutes. Then add the tomato mass and cook for another half hour under the lid, stirring occasionally. Add oil, salt and cook for 5 minutes. Place in sterilized jars.

    6. Roll up with tin or screw lids. Turn it upside down, wrap it in a blanket and leave until completely cool. From the specified amount of products you should get 6 half-liter jars of delicious tomato sauce.

    Selection and preparation of tomatoes and apples before starting the process

    It is better to take medium-sized, rather than large, tomatoes that are rolled into jars, otherwise it will not be easy to get them out of such containers. You need to check if there are any spots or dents on the vegetables; the surface of the tomatoes should be smooth and the peel should be tight.

    Any varieties of sweet and sour apples are suitable for preservation. Small whole fruits look original, large ones are cut into slices. The most delicious pickled tomatoes are obtained with Antonovka, since these apples have a wonderful aroma. The cores are removed from the fruits and cut into quarters or slices.

    You will need:

    • half a kilogram of pear;
    • tomatoes 2 kg;
    • cloves 4 buds;
    • coriander to taste;

    • salt 1 tablespoon;
    • vinegar 30 ml.

    Cooking method

    1. First, fry the onion in a frying pan greased with oil.
    2. Then add tomatoes, jalapenos and fruits and simmer for 40 minutes.
    3. Beat with a blender, add basil, salt, sugar and vinegar.
    4. Boil for another 10 minutes.
