Tomatoes for pasta

A good paste has a thick consistency; for cooking you need to choose fleshy tomatoes with dense pulp and a minimal amount of liquid (almost without seed chambers). Small spherical or plum-shaped fruits have these characteristics. Only fully ripened specimens should be processed, otherwise a lot of waste will remain and the paste will acquire a brown tint. Best varieties:

  • Krasnodar. Mid-early, semi-determinate, high-yielding. Tomatoes are flat-round, red, from 70 to 110 g. The pulp is dense and tasty. The variety is heat-loving, capricious, and requires preventive treatments against diseases.
  • Volzhsky. Productive, heat-loving, determinant, mid-season hybrid. Fruits up to 100 g are cylindrical with slight ribbing, red. The pulp is dense with a rich, good taste. Volzhsky was bred for the south, requires garter, and is resistant to major crop diseases.
  • Success. Early, standard, high-yielding. The fruits are plum-shaped, red, dense, from 30 to 70 g. The variety is resistant to all unfavorable factors, as well as good taste, there are no disadvantages.
  • Miracle of the market. A mid-early, indeterminate variety that cannot be grown in cold regions without shelter. The main advantage is excellent immunity to diseases and pests. The tomatoes are red, round up to 600 g, the pulp is dense with good taste.
  • Cadet. Mid-season, determinant. Productivity is average. The fruits are red, cylindrical, dense, 50–60 g each. Cadet is valuable for its taste, as well as for its increased immunity to disease.
  • Lighthouse. Indeterminate, mid-season. Tomatoes are round, raspberry-colored, up to 40 g. The pulp is tasty and dense. Productivity up to 4 kg/m². Advantages: possibility of growing in northern regions, resistance to viruses and fungi. Disadvantages - bland taste of the pulp in rainy summers.

Attention! To obtain a thicker, porridge-like consistency, it is recommended to boil the paste, but the beneficial substances evaporate from the product along with the juice.

The varieties recommended for whole-fruit canning are suitable for making paste; they are dense and not prone to cracking. To reduce waste during processing, select tomatoes with thin or medium-hard skin. It is better to process red or dark pink fruits into paste, then it will have a bright, beautiful color.

Which indeterminate tomato varieties are the most productive for greenhouses? There is a misconception that an indeterminate tomato variety is just a tall plant, but in fact this is what they mean...

The ability to choose the right varieties of tomatoes for different purposes will help housewives avoid troubles in the process of preparing preparations. For those who prefer sweet juices and pastes, it is better to choose tomatoes with a high sugar content; lovers of piquant “sourness” will benefit from varieties and hybrids characterized by a balanced taste. To get good yields you need to purchase zoned tomatoes.

The shape of the fruit resembles a lemon; the plant itself is formed into one or, if necessary, two stems, leaving up to 5 clusters. During the flowering period, in order for more ovaries to appear, the inflorescences need to be shaken off. The variety is excellent for canning and is very useful for stomach diseases with high acidity. An undoubted advantage is that the fruiting season ends before the spread of diseases.

A medium-ripening variety, the height of the bushes does not exceed 80-100 cm. Smooth, round-shaped fruits are distinguished by an unusual color: yellow stripes delineating the bright red skin. These tomatoes are very tasty and great for making salads. The bush begins to bear fruit on the 110th day, and before the spread of diseases, as a rule, it manages to produce the entire harvest. The daily yield ranges from 3 to 5 kg/sq.m. m. Bushes of this variety must be tied to a trellis and pinched. It is grown in open ground.

Tomato-peach

It is named so for good reason: the fruits and leaves of this tomato are covered with soft fluff. Cylindrical tomatoes of rich red color reach a weight of 130 g and have a very delicate, without sourness, taste. The bushes grow up to 180 cm and are very resistant to diseases of this crop. This variety is famous for its high yield.

Pickling delicacy

Yamal

Early ripening, with a maximum bush height of no more than 50 cm. It is cultivated exclusively in open ground, the first harvests can be harvested within 85 to 100 days, counting from the emergence of shoots. Clear

A late-ripening variety with fruits up to 150 g. The bushes themselves are not tall, but they produce a large harvest.

Moscow delicatessen

This variety is distinguished by stable yields and elongated fruits of a somewhat uneven shape. They grow in clusters, each containing 12 to 15 tomatoes.

Demidov

A small standard variety with a maximum height of 60 cm. Large, even fruits have a good taste. Such tomatoes are cultivated only in open ground and have high yields.

Sultan

A hybrid produced in Holland, ideal for open ground. Tomatoes of this variety can easily withstand difficult weather conditions, while the taste and yield remain high.

White filling

A variety with early ripening and a bush height of no more than 50 cm. The first fruits appear on the 85-100th day, they are distinguished by their reddish color and flattened shape. Sourish, medium-sized tomatoes have a pleasant taste, making them suitable not only for pickling or canning, but also for salads or fresh consumption.

This variety is better suited for planting in open ground than most other tomatoes. It is planted on beds, between which there is a distance of 50 cm. Each bed has four rows, spaced 35 cm from each other. A gap of 30 cm is left between the centers of the holes. It is important to remember that the beds should be located strictly from south to north. Up to 1000 such bushes can grow on just one hundred square meters.

The holes are made 30 cm deep, 2 liters of water and half a liter of chicken droppings dissolved in water are poured into each, and a liter of fertilizer mixture is also poured out. The composition of this mixture includes: ash (necessarily remaining after burning potato or tomato tops), 1 bucket of carefully sifted humus, from 30 to 40 g of potassium magnesia and half a glass of nitroammophos and double superphosphate. Please note that you need to prepare this mixture in advance.

After the soil absorbs water, it must be mixed with fertilizers and the seedlings should be placed in the resulting dough-like mass. The tomato should be dug into the ground up to the cotyledon leaves, and an hour later, 1 liter of water should be poured under each plant. White filling should be planted in cloudy and preferably humid weather, so that direct sunlight does not fall on the delicate leaves. If this is not possible, then planting can be done early in the morning or in the evening.

This variety requires protection from the weather. To do this, every 60 cm through all 4 rows of the bed you need to stretch arcs of thin iron rods or wire with a diameter of at least 8-10 cm. In case of rain, an awning will be thrown over these arches. It can be made from plastic film, folded in half and laid in the middle with 3 layers of kraft paper.

After the tomatoes take root, they will need to be sprayed with a 0.1% boric acid solution. This must be done at the very beginning of flowering.

Black Prince

This is one of the mid-season varieties with an average bush height of 110-140 cm. The ribbed, flat-round fruits are black with a crimson tint and are famous for their strong and juicy, without sourness, pulp. These properties make them ideal for salads and garnishing dishes. Unripe tomatoes are dark green at the stem; as it ripens, it changes to purple-brown. In general, the weight ranges from 110 to 170 g, but some fruits reach 400 g. The first inflorescences of these tomatoes are formed above the 7-9 leaves, each of the later ones after 3 leaves. Each nest contains about 4 tomatoes. The yield of this variety can reach 3-3.5 kg, but the bushes require staking, in which it is formed into one stem, and pinching. Black Prince tomatoes also have more serious drawbacks: once picked, they disappear quite quickly.

Excellent taste, a large amount of vitamins and nutrients, a huge variety of varieties, simple agricultural technology that allows you to achieve large yields, make tomatoes a welcome guest in garden beds. Tomatoes are grown in open ground, in greenhouses and greenhouses, under film, on loggias and even on window sills. Tomatoes are also an excellent dietary plant. You can praise tomatoes for a long time, talk about their properties and classifications, but in this article we will focus on describing some varieties of tomatoes. Breeders have developed a huge number of tomato varieties, so we will consider only the most popular varieties and hybrids.

Small clarification. A variety is a group of plants with similar economic characteristics. But these characteristics can fluctuate quite a lot. For example, one bush is very productive, another is low-yielding, etc. Therefore, hybrids obtained by crossing different lines of the same variety have gained great development. At the same time, the characteristics of hybrids, in a number of characteristics, are superior to the parental lines, and these characteristics are more stable, and they do not have such a wide spread. Usually the seeds of first generation hybrids, designated F1, are used. And now, more about the varieties and hybrids of tomatoes.

The best varieties and hybrids of salad tomatoes

04/26/2021 To date, breeders have created more than one thousand different varieties and hybrids of tomato - a wonderful plant, without which it is impossible to imagine a modern vegetable garden or garden beds.

To classify the variety of tomatoes that exist today, one can proceed from a variety of criteria, including such as the timing of plant ripening, the degree of their early ripening, the volume of green mass, the type of pollination, and so on, not to mention the fact that the fruits of different varieties can differ significantly in shape , color, size and taste characteristics.

However, based on purely consumer properties, all existing tomato varieties can be divided into the following categories:

1. Varieties intended for canning and pickling

Tomatoes of this group, as the name suggests, are used primarily for salting, pickling and canning. For this purpose, fruits most often taken are small in size, with dense pulp and increased permeability of the skin.

2. Varieties intended for cooking in the oven

Tomato fruits that belong to this varietal group are recommended for use when preparing various hot dishes. They have excellent taste, and due to their large size they are easy to stuff and bake.

3. Varieties intended for decorating dishes

As a rule, these tomatoes are small in size, elegantly colored and served with ready-made snacks or other dishes as an edible decorative element.

4. Dessert varieties with fruit or berry taste and aroma

This group includes all varieties of cherry tomatoes, of which there are a huge variety today.

5. Varieties used for preparing various sauces, including tomato paste, ketchup and lecho

A characteristic feature of tomatoes in this category is the minimum number of seeds inside the fruit.

6. Varieties of salad tomatoes

This group of varieties occupies a special place because they are intended primarily for fresh consumption. Freshly picked salad tomatoes have a bright and rich taste with a pleasant fresh aroma. In addition, they have a rich chemical composition and contain many vitamins, macro- and microelements, pectins, organic acids, dietary fiber and other useful substances.

It makes no sense to pick the fruits of salad varieties prematurely for the purpose of their subsequent ripening on the windowsill, since they acquire their best qualities only when they are fully ripened on the plant.

In turn, salad varieties of tomatoes can be divided into three types:

· Pink

This is the most popular group among salad varieties, which is considered to be a “classic of the genre.” Pink tomatoes are usually large-fruited and have the most pronounced taste with an amazing aroma.

· Fleshy

The fruits of these varieties have high nutritional value and are most often used as one of the key ingredients for preparing salads. They have a juicy, rich taste and a distinct smell of freshness.

· Sweet

This group of tomatoes has a slightly sweet taste. If you cut a tomato into two parts, you will find small light particles on its inner surface that resemble grains of sugar in appearance.

All of the listed types of tomatoes can be used not only for making salads: they also make excellent juice, pastes and sauces.

As a rule, salad varieties are tall and have fairly large fruits, so to ensure a good harvest, they need to be given more attention. They respond well to timely watering and fertilizing, and most varieties require mandatory tying to supports.

Since salad fruits are most often consumed fresh, straight from the garden, it is recommended to plant several varieties at once, with different ripening periods. This simple technique will not only increase productivity, but will also provide fresh tomatoes throughout the summer.

The most popular varieties of salad tomatoes

· Rose honey

Mid-season variety. Typically, the height of a plant grown in open ground does not exceed 70 cm.

The weight of the fruit is within 200 g, but there are cases when individual gardeners managed to grow tomatoes weighing up to 1.5 kg.

The fruits are heart-shaped with a slightly ribbed surface and thin skin, colored deep pink. The pulp is fleshy, very juicy and sweetish in taste, without acid.

Ripe tomatoes can be used both in salads and to prepare tomato juice or ketchup based on them.

The fruits of this variety retain their marketable appearance and high consumer properties for 10 days.

The disadvantages of “Rose honey” include increased susceptibility to infections, as well as the tendency of ripening fruits to crack due to lack of moisture.

· Koenigsberg gold

In terms of ripening time, this variety belongs to the mid-season varieties. The height in open ground reaches 1.3 m.

The fruits have an elongated shape with a protruding tip at the tip. The color of the skin is even, pleasant golden color.

The flesh of “Konigsberg Golden” is fleshy, dense, juicy and aromatic. It tastes sweet with a light fruity note and barely noticeable sourness, and therefore has many connoisseurs among gardeners. The weight of individual fruits can exceed 400 g.

This variety is high-yielding, has a good level of vitality and perfectly resists such a dangerous disease as late blight.

An adult plant requires timely gartering to a support.

"Konigsberg gold" is used mainly for salads, but you can also make sauces, ketchups and lecho from it. The fruits of this variety are practically not used for preparing tomato juice, since they are considered too sweet.

· Honey drop

Medium early ripening variety. The plant is quite tall (up to 120–150 cm), quickly gaining green mass.

Advantages of varietal tomatoes

But first I would like to talk about why gardeners love varietal tomatoes. I would say that one of their main advantages is their high taste, although in fairness it should be noted that in recent years more and more hybrids with a high sugar-acid index have appeared, the taste of which can compete with the taste of varietal tomatoes.

The second advantage of varietal tomatoes is the low cost of seeds: they are tens of times cheaper than hybrid seeds. In addition, you can safely collect seeds from varietal tomatoes for propagation within two to three years. Then, however, varietal purity is gradually lost, because during pollination from year to year, insects mix pollen of different varieties.

If you don’t think about it and continue to grow tomatoes from seeds you’ve collected yourself, then in 10 years you may have a mixture of varieties growing on your plot that no one else will have. This would be a fun experiment, but for those who grow tomatoes for harvest, I would advise renewing the seeds every 2-3 years, buying them in specialized stores.

Tomato variety Grandma's secret

This variety of tomato is indeterminate; in other words, it will grow and grow until it is limited in growth by pinching. If so, then the height of this variety can reach an average of 150-170 cm, and sometimes reach up to 2 meters. If we talk about the fruits of the “Grandma’s Secret” variety, or rather about their ripening, then this happens on about 120 days. This means that if you have a region with poor agriculture, that is, simply cold, then initially tomato seedlings will need to be planted and germinate in an apartment or other warm room. At the same time, watch and care for the tomatoes. In principle, this is not any special exception from most other varieties. The shape of the ripened fruits is flat-round, like a small pumpkin, and fits in the palm of your hand. The color of ripened tomatoes reaches dark red, dark brown. The color is very rich, but not always uniform. When fully ripe, the taste of the fruit may become slightly sweeter. The “Babushkin Secret” variety is perfect for eating raw, for salads and fresh dishes, as well as for preparations. Due to the fact that the fruits are not huge, they can be used whole for canning, which means that they will be evenly salted and will be convenient to eat. Like other varieties of tomato, “Babushkin Secret” is not particularly resistant or susceptible to diseases and insects . It also suffers from all the problems of tomatoes. Therefore, this variety, like others, requires good care to obtain the proper harvest.

Recommendations for growing tomatoes will also not differ from what you have to do with other varieties. “Grandma’s Secret” feels comfortable at a temperature of 23-25 degrees Celsius, does not tolerate excessive humidity due to the possibility of developing diseases and rotting, and requires regular watering at the root. Before the final harvest of tomatoes, it is better to stop watering completely for 4-5 days so that the fruits, like the whole plant, absorb excess moisture and acquire the proper taste. In general, the variety is quite young, but popular. This means it is quite worthy of your attention to grow it in your gardens and greenhouses.

The best low-growing tomatoes

And of course you need to consider low-growing tomatoes.

Bulat F1

A cold- and disease-resistant hybrid up to 70 cm high can be grown both in greenhouses and open ground. Not very large red spherical tomatoes ripen in about 3 months after planting. They have good transportability and are suitable for salads and pickling.

The plant is only about 30 cm high and is resistant to cold, so it is suitable for growing in greenhouses and open ground. The variety is early ripening and productive. Red tomatoes weighing about 100 g are sweet and juicy. Suitable for preparing salads and canning.

Nastenka

Slightly elongated spherical tomatoes ripen on compact bushes up to 70 cm high. Despite the fact that the plants are small, the weight of each fruit reaches about 300 g. When grown in greenhouses with 1 sq. meter you can collect up to 4.5 kg of dark pink tomatoes with delicate pulp.

Non-sealing cylindrical

The variety is distinguished by low bushes that do not require pinching. They ripen cylindrical red tomatoes weighing about 100 g. The harvest ripens almost simultaneously, about 3 months after germination. From 5 to 7 tomatoes are formed on one brush.

Nikita

A low-growing variety with bushes a little over half a meter high. The average harvest ripening period is 3.5 months. Orange small fruits have wonderful taste. The Nikitka variety bears fruit until frost. Each plant produces a large number of bright orange cylindrical tomatoes. It is recommended to use fresh, for pickling and preservation.

Growing tomato seedlings for planting in open ground

Tomatoes are heat-loving plants; in order to grow them in most of our country, it is necessary to initially grow the seedlings in greenhouse conditions. Firstly, it makes the plants more resistant to climatic influences. Secondly, it artificially increases the warm period of time (which is so lacking) for the growth of plants. You can learn more about how to grow seedlings from the article “How to grow tomato seedlings” You can also grow cucumber seedlings in Moscow; more details about this method are written in the article “Seedlings in Moscow (tomatoes, cucumbers, onions, cabbage, etc.). Sowing without soil in rolls.”

How many kg of tomatoes do you need to make 3 liters of tomato juice?

jarptica

To get 3 liters of tomato juice, you need to take 4 kg of ripe tomatoes. We make tomato juice every year. And every time we get approximately the same proportions. It all depends on the type of tomato. Large, overripe tomatoes, such as Ox's Heart, are best suited for juice.

dolfanika

When preparing tomato juice, it should be taken into account that the juice may boil down somewhat, although if you sterilize the jars with juice, you can do without boiling. You need to take approximately four and a half kilograms to get three liters. The fruits used for juice are absolutely healthy; we can say that the best tomatoes should be used for canning juice. Otherwise, the juice may not be preserved for a long time, so the finished product is sterilized in boiling water to preserve all the vitamins, but at the same time ensure long-term preservation.

It is better to cook from fleshy garden tomatoes, rather than store-bought ones, as they are slightly odorless and tasteless, and the juice will not be so great.

milashkaktn

I prepare tomato juice in small jars.

To prepare 1 kg. Tomato juice I take 5 tomatoes weighing about 1.3 kg.

Accordingly, let's calculate the proportions for 3 liters. juice:

1.3 kg. x 3 l. = 3.9 kg i.e. about 4 kg. tomatoes will be needed to make 3 liters. juice

Nevertheless, these calculations are also approximate because it all depends on the recipe for tomato juice, on the tomatoes themselves - you may get juicy, fleshy ones, or maybe watery ones, then you will need to take all 6 kg. vegetables

Making tomato juice at home

It all depends on the variety of tomato.

If the tomatoes are fleshy, then you need a lot, and if the tomatoes are watery, then you will need at least 6-7 kilograms. The tomatoes should be bright red and medium in size.

Approximately two kilograms of juicy tomatoes yield one and a half liters of tomato juice.

How to make tomato juice

Tomatoes are different. But, as practice shows, you need a minimum of 4 kg of tomatoes to get three liters of juice. In general, from four to five kilograms. It all depends on the juiciness of the tomatoes. Some are quite dry, while others, on the contrary, are very juicy.

Agafya

Tomatoes come in different varieties, some are more fleshy, they yield less juice, others yield more juice. Therefore, depending on the variety of tomatoes, you will need from 4 to 5 kilograms. I know from my own experience, because every year I make the preparations myself.

During the squeezing process, the mass will decrease, so you need more tomatoes than 3 kg. To get 3 liters of tomato juice you need about 4-5 kg. It still depends on the strength and ripeness of the tomatoes. The juicier the tomato, the more juice we will get.

Brytex

To prepare 3 liters of tomato juice, something like 4-6 kg of tomatoes is suitable, depending on their variety; the larger and juicier the tomatoes, the better. The warmer the juice is stored, the more vitamin C it will retain.

It depends on many factors. From the variety of tomatoes, from their juiciness, appearance, and so on. Speaking on average, to make 3 liters of tomato juice, you will need 4-5 kg of good ripe, high-quality tomatoes.

I think you need to take about 4 kg of tomatoes. My parents make tomato juice every year, then use it throughout the winter to prepare various dishes. Natural homemade tomato juice is always better than store-bought.

ignaz

You will need 4-5 kilograms of ripe tomatoes.

Tomatoes can be of different fleshiness, if you want the degree of dryness.

So whatever tomatoes you come across, that’s how much juice you’ll get from that mass of ripe tomatoes.

milonika

You will need 5-6 kilograms of tomatoes for 3 liters.

It depends on what…. Good is a relative concept. Good for what? For taste - we love big pink tomatoes. For tomato juice, the best, in my opinion, are late varieties. They are meaty and sweet. But they do not ripen everywhere, and there is a lot of hassle with them. Early and super-early low-growing varieties are easiest to plant. I plant different varieties according to ripening time and height. Something will freak out. This year, for example, I planted: Riddle-super early Iskorka early Irishka early Kornievskie-medium Raspberry Viscounter-early Pridneprovsky early pink cheeks-early Verlioka-late De Barao striped-late.

Eee-eh! Great, mighty
