It’s better to choose young potatoes, then you don’t have to peel the skins, but simply wash them thoroughly with a brush. We try to select medium-sized tubers, all the same, otherwise one potato will be overcooked and the other will be raw. The shape of the tubers is preferably round, slightly elongated.
So we washed the potatoes, peeled them or left the skins on. Now cut into four slices. If you had to use large tubers, then cut them into more slices, but make sure that they are approximately the same.
Spread a towel or paper napkins on the table and lay out the slices to dry thoroughly, for about half an hour. There is no need to cover the top with anything.
