How to cook adjika with an intriguing name - Zamanikha

Georgia and Abkhazia are considered the birthplace of adjika, but in Russia this tomato snack has already taken root and become a favorite. Classic zamanikha is prepared using tomatoes and peppers, but some housewives experiment by canning it with apples and carrots. The mixture should have the consistency of puree.

Ingredients

  • tomatoes - 3 kg;
  • bell pepper - 1 kg;
  • hot pepper - 4 pcs.;
  • garlic - 4 large heads;
  • vegetable oil - 100 ml;
  • salt - 4 tablespoons;
  • sugar – 1/2 cup;
  • vinegar 6% - 1 tablespoon;
  • blender;
  • electric stove;
  • pot;
  • board and knife for cutting vegetables;
  • kettle with boiling water;
  • 0.5 liter jars for storage.

Step-by-step cooking process

  1. Scald the tomatoes with boiling water and remove the skin.

Place the resulting mass in a saucepan, add butter, salt, sugar and vinegar. Cook over low heat at 100-120 degrees for 1 hour, stirring occasionally.

At this time, peel the garlic.

Cut the bell and hot peppers, remove the stalk and remove the seeds.

Pass the pepper and garlic through a meat grinder or blender.

Add to the boiled tomatoes, stir and cook for another 20 minutes.
